Each Course of the Meal
Bread
If you would like butter on your bread and the butter is in a serving dish, place some butter on your butter plate, not directly on the bread. Never use the knife with the butter dish to butter your bread. If no knife rests on the butter dish, use your own butter spreader. Never double dip in communal sauce.

Soup
Hold the soup spoon like a pencil, between your index and middle fingers with your thumb up. Spoon the soup away from you towards the center or top of the bowl, and then sip the soup from the side of the spoon. Do not blow on your soup to cool it down. If it is too hot, stir it or spoon from the edge of the bowl first. Rest the spoon in the soup bowl while you pause. When you finish the soup, place the spoon on the plate beneath the soup bowl or cup; do not leave it in the bowl. Do not put it on the table cloth. Never slurp the soup. At a formal meal, a sherry or aperitif may be served with the soup course.

Salad
Salad may be served before or after the main course/entrée. You will know by how the salad fork is placed. Never push the plate or bowl away from you when you have finished. The placement of cutlery informs the waiter that you have finished.

Entrée or Main Course
The main course is normally beef, chicken, duck or lamb. If you are served a large steak, you may cut it into two or three sections, but not into many small pieces. You may be given a special steak knife to help you cut the meat without sawing. At a formal meal, red wine is served with most entrées.

Dessert
If you are served ice cream, use your spoon; if you are served cake with a sauce, use both the fork and the spoon. Put the food in with your fork. At a formal meal, champagne or dessert wine is served with a dessert. Fresh fruit and cheese are sometimes served as a dessert. You eat these with a knife and fork.
